In 1866 Charles Goodnight took a herd of 2,000 longhorn from Texas, to Denver. The distinguishing feature of his wagon was the box on the rear with a lid that lowered to become the cook's table, the “Chuck Box”.

Almost 150 years later the wagons have been modified but the chuck box remains the headquarters for the back-country outfit. It is more than just a place to eat meals; it’s the social center, where good food is cooked, tall tales told, and the days events recounted.
